January 15, 2012 - Sunday - A day of Rest?

Got up late, got some coffee and cereal for breakfast.

Helped K change the cable for the bird feeders.

Made a yummy cauliflower pesto soup for lunch and made some hot chocolate to warm us up when we came back inside.

Ordered some spices from Penzey's, ordered my O S Lion thumb drive from the Apple Store and finally started some laundry and worked some on family history.

Checked out some local CSA's in the area and think I've decided on the New Leaf CSA in Dummerston, VT.  Looking forward to getting lots of fresh veggies and freezing a lot of food again this year.  However hopefully the generator we bought will work if we need it to.  So far it has fallen down on the job twice since November.

Watching the Giants beat the Packers at Packer stadium tonight.

January 14, 2012 - Saturday - Lentil, Pea and Potato Curry

We had this over brown rice and enjoyed it for lunch.  Made extra so we could eat some tomorrow before I freeze some of it.

Today was sunny but cold and windy.  We got another 4 inches of snow on top of the 5 from two days ago.

Since Brattleboro Roofing will be coming to put up some extra flashing around the deck edge to stop water from coming down on to the big windows on the south of the house, we are going to move the cable and pulley system for the bird feeder lines.  K started working on that today while I made the above curry.

now we are watching some football.

January 10, 2012 - Tues Morning

I've lost a couple pounds this week, make my knees feel better as well as giving me some extra energy.

This morning I made what I'm going to call
L & K's Alleyway Breakfast.

Russet potatoes, cook 3 min. in microwave on High
then slice thick, put in a pan

Add a little water and a can of rinsed drained beans, cover and heat for about 5 or more minutes

Slice an avocado

Mix, soft tofu with granulated onion and lemon pepper. let sit
Bring out the salsa

When potatoes are done, scoop with beans on to a plate, add avocado, cover with tofu and salsa.

Mmmmmmmmmmmmmmm! what marvelous flavor!

Also made Ambrosia

2 peeled cut oranges, 2 cups pineapple sliced and cut small, 1/4 cup shredded coconut, 4 tablespoons dried cranberries

Mix 1 tablespoon orange juice concentrate, 1/2 teaspoon almond flavoring, 1 tablespoon water

Pour over fruit and toss.

Lunch wil be, black beans, leftover pasta with lots of veggies cooked with a little tamari

January 7, 2012 - Saturday Chunky Corn Chowder modified by me

Decided since I was a bit chilled, to make some sort of chowdah for supper.

Started with a Chunky Corn Chowder - Vegan recipe but added ideas from other chowder recipes I had found.

Here is the recipe:
Onions peeled and chopped
4 cloves minced garlic
3 medium sized carrots chopped
3 celery stalks chopped
about a half a tsp of salt
same amount of pepper

Toss into pan with 1/2 cup of water and heat until onions are soft.

Add 2 cups broth
Several potatoes chopped
about 3 - 4 cups of chopped kale
2 tomatoes chopped
about 2 cups frozen corn
add about a tsp of garlic salt
add about a tsp of garlic powder

Let heat, add a little more water if need to.

Add about 2 cups of soy milk ( or milk) to your pot and let gently warm up.

Mix about a teaspoon or two of arrowroot  or cornstarch with about a 1/2 a cup of milk, Add to the pot. Let the milk warm up slowly and stir to get the chowder to thicken.

Yousa!  It was delish!

January 7, 2012 - Saturday

Made popovers for breakfast, right after I got the mixture into the muffin tins and into the oven, the oven gas burner apparently decided to blow a hole, so it started to roar part of the time.
Continued to cook the popovers in the oven, but won't use it again until we get someone to come fix it.

Looked at the Kickstart Vegan 21 day forum to ask for information about what to use for smoothies instead of bananas.

Now I''m about to work on family history.  K has gone to her Mom's for the afternoon and I'm also looking at more veggie recipes.

January 6, 2012 - Friday - Hooray!

Got up at 5:00 a.m. the normal time, was at work by 7:10 a.m.  Didn't work though, I played with my family history until 8:00 a.m.  Worked on Levi Church from Bainbridge, NY.

At 8:00 a.m. I started checking into Classification Deposits that were billed and credited during the year. We are not in balance for the year, so I have to dig through and figure out what the difference is.

Had peppers, carrots, celery with dill dip and wheat thins for lunch.

Tonight for supper had some leftover  curried garbanzo beans and Kale on microwaved potatoes. Yum! Came home and could smell the garam marsala throughout the house.

Watching Doc Martin tonight, then on to more family history!

Jan 5, 2012 - Interesting day

So, I've spent the last 3 days checking and re-running reports for work that did not process through on December 30th.  Kind of put me behind for the month all ready.  But hey, in a month, IS IT REALLY Gonna matter.  I don't think so.

So today I made a quinoa, carrot, celery, cabbage, red pepper salad with a curry, olive oil and lemon juice dressing.  We had it hot for breakfast - added some raisins to the salad.

Later I had it cold as a nice salad and added a slice of oatmeal bread with hummus to eat with it.  Very tasty salad warm or cold.   The original recipe called for couscous instead of quinoa.  I love quinoa.

Tonight I made curried garbanzo beans and Kale.  Wow what flavor, used coriander, garam marsala, curry,   cumin and some red pepper flakes.  Fresh ginger, onion, garlic, and mustard seeds.

I'm liking the energy I'm feeling in the evenings.  Even with heavy stress this week, I don't feel quite as fatigued.

Been reading Forks over Knives and now Kirsten is reading it as well.  It makes pretty good sense to us.

2 Jan 2012 - ready to go!

Yesterday I made a potato, onion, red pepper mixture for breakfast, sprinkled with Tuscan Sunset seasoning and Arizona Dreaming, for breakfast.   It was tasty, but within an hour we were both hungry again.

So I tossed some onions, garlic, potatoes and winter squash into a sauce pan with broth, added some leftover veggie chili and brown rice, then pureed it all together.  We grated some extra sharp cheddar cheese over the top of it.

Then our part-time neighbor up the road stopped by with his wife (whom we hadn't met yet) we hadn't seen Phil since Hurricane Irene when the roads washed away and he was stuck here in Vermont for a week.  They visited for about two hours and during that time I had put on lentils to cook, but they burned by mistake.

Made lots of dishes and pans yesterday and luckily I have a wonderful dishwasher, who complains about all the dishes but does enjoy eating what went into them.  LOL!

So........

Today I'm working on doing laundry, putting away some genealogy books and notebooks and getting a grocery list together so I can enjoy the Kickstart program which starts officially today.
